Simple, fast and healthy: Zucchini Salad

Zucchini are light and they will not overload your stomach, and if you prepare them in an adequate way, we guarantee you a healthy and light lunch. There are a million ways to prepare them and each one is great, but a refreshing zucchini salad is definitely a winner. Serve it with lunch, and you can also with barbecue. 

Ingredients:

  • 2 zucchini
  • 4 cloves of garlic
  • lemon juice
  • oil
  • spice, primrose

Preparation:

Cut the zucchini into cubes. Add salt and leave for about 10 minutes to "let go" of water. Then drain them well. Saute them in a little oil, but cover them. Be careful not to overcook, because then it will fall apart. Strain them again. Mix with minced garlic, oil and add lemon juice. Sprinkle with chopped parsley and spice, then add salt and pepper. Stir well. Cool to room temperature, then place in the refrigerator.
