Ingredients for the crust:

1. 190 grams of flour
2. 50 grams of powdered sugar
3. 115 grams of butter
4. 1 egg
5. 1/4 teaspoon salt

For the cream:

1. 150 grams of sugar
2. 2 eggs
3. 3 egg yolks
4. 1/4 teaspoon salt
5. 120 milliliters of sour cream for cooking
6. 120 milliliters of lemon juice
7. Grated rind of 2 lemons

Preparation:

Mix the flour, sugar, and salt, then add the diced butter and mix in the "plus" mode until everything is combined. Never stir at high speed. Shape the dough into a ball and leave it in the fridge for half an hour. The main trick of this recipe is to let the dough cool completely. Then roll out on a floured surface, transfer to a 24 cm diameter tray, and press well. Prick the bottom of the crust with a fork, then cool in the freezer for another 30 minutes.

While the dough is cooling, beat the eggs, yolks, and sugar, add the sauce, lemon juice, zest, and finally the sour cream. Preheat the oven to 180 degrees. First, bake the crust yourself, put beans or baking balls in the filling space to keep the crust in shape. The first baking takes 15 minutes. Then remove the beans, and bake for another 10-15 minutes until golden.

Open the oven, carefully pull out the grill halfway, and pour the cream over the crust so that it is evenly distributed. Immediately reduce the temperature to 150 and bake for another twenty minutes, or until you notice that the cream has hardened. Refrigerate for at least two hours before serving.
