The galette dough should not be very thin, but it should also not be too thick because then it will not be crispy. The perfect dough thickness is about three millimeters. In addition to the thickness of the dough, it is necessary to pay attention to the filling.
It is important to pay attention to the humidity of the filling so that the galette does not fall apart from too much moisture. Apples, blueberries and other fruits rich in pectin are the best choices for filling galette, but you can also prepare it from juicier fruits such as strawberries or apricots. In this case, after you put the fruit on the pie, sprinkle with a small amount of semolina or corn grits, and you can add a little density. Also, make sure that the amount of filling for the galette is not too large because then the juices will leak over the crust and they will not be crunchy. Ingredients:
- 300 g of flour
- 4 tablespoons sugar
- 1 vanilla sugar
- A pinch of salt
- 150 g butter
- 1 egg
- 1 or 2 tablespoons sour cream
- 1 egg for coating

- 400 g strawberries
- 50 g of sugar
- 1 vanilla sugar
- 1 tablespoon starch flour or semolina

Preparation:
- Clean the strawberries, cut them into quarters, sprinkle with sugar and let them stand for 30 minutes.
- Then drain the liquid and sprinkle them with starch flour or semolina.
- In a large bowl, mix the flour, sugar, salt and cold butter.
- Then add the egg and knead the dough.
- Add a tablespoon or two of sour cream as needed.
- Don’t knead it for too long because the dough doesn’t need to be perfectly smooth.
- Divide the dough into two equal parts and put it in the fridge for 30 minutes.
- Preheat the oven to 180 degrees and line the baking sheet with baking paper.
- Roll out the prepared dough into a circle about 3 mm thick.
- Arrange the prepared strawberries on the dough.
- Coat the edges with egg and fold them over the fruit on all sides.
- Bake the galette for about 25 minutes or until the dough takes on a nice golden brown color.
- Serve them lukewarm, with a scoop of ice cream.
