Delicious: Crispy vanilla rolls

Vanilla rolls are most often prepared with almonds because of their delicate taste, and since we use peeled almonds, the rolls are also slightly lighter. We add that in the recipe for vanilla rolls, but you can replace almonds with walnuts or roasted hazelnuts. It is the old vanilla rolls that are prepared with walnuts, so use them if you want a slightly more traditional taste. 

Ingredients for 35 to 40 vanilla rolls:

  • 250 g of flour
  • 80 g powdered sugar
  • 1 vanilla sugar
  • 200 g butter
  • 100 g peeled and ground almonds (either walnuts or roasted hazelnuts)

To roll the vanilla rolls:

  • 1 vanilla sugar
  • 2 tablespoons powdered sugar

Preparation of vanilla rolls:

  1. For the dough in a larger bowl, mix the flour, powdered sugar, vanilla sugar, and almonds.
  2. Add the diced butter and rub with your fingertips into the other ingredients until you get a mixture like sand.
  3. Add a teaspoon or two of very cold water to blend the mixture into the dough, it is not necessary to knead for a long time because otherwise, the dough becomes tough.
  4. Divide the dough into two equal pieces and form two long equal cylinders 2.5 to 3 inches in diameter.
  5. Cover them with cling film and refrigerate for at least an hour, preferably overnight.
  6. Take the dough out of the fridge and cut each cylinder into 16 to 20 pieces so the rolls will be the same weight.
  7. Roll each piece first on a work surface, shape it into a bun and place it on a baking sheet lined with baking paper, with a small gap as they grow in the oven.
  8. Preheat the oven to 175 ° C and place the filled tray in the oven for 12 to 15 minutes.
  9. After removing the rolls from the oven, leave them for a few minutes to cool down a bit and roll them in a mixture of vanilla and powdered sugar while still lukewarm.
  10. Allow to cool completely and serve.
