Make a delicious strudel with greaves

When we talk about strudels, most of them are sweet, with poppy seeds or walnuts. However, salty strudels are a real delicacy, but they are a bit rarer on the tables. Prepared according to this recipe, strudel with greaves will be a real star on your table.

Ingredients:

  • 1 kg of flour
  • 500 ml of milk
  • 1 bag of dry yeast
  • 1 tablespoon sugar
  • 1 tablespoon salt
  • 125 g butter
  • 1 egg
  • 250 g of cracklings
  • 2 tablespoons fat
  • sesame for sprinkling

Preparation:

  1. Pour sugar and yeast into the lukewarm milk, then wait for the yeast to activate. 
  2. Then add softened butter and flour, and knead a smooth dough. 
  3. Leave it covered in warm water to rise. 
  4. Grind greaves and fat into a paste and add salt if necessary. 
  5. When the dough has risen, divide it into two parts, mix and develop into two thin crusts. 
  6. Coat each crust with half of the greaves paste and fold into a roll. 
  7. Place the rolls in a baking tray lined with baking paper, coat them with beaten egg and sprinkle with sesame seeds. 
  8. Cover with a cloth and let rise while the oven heats to 200 degrees. 
  9. Bake the strudels for about 45 minutes or until golden brown. 
  10. If they start to darken before they are baked, cover them with foil and continue baking. 
  11. Remove the baked salted strudels from the oven, cover with a damp cloth and leave to cool a bit, then cut into pieces of the desired size and serve.
