Recipe for soft homemade cornbread

When homemade cornbread overwhelms the entire home with a warm scent, we will immediately return to childhood and the days spent with grandma. Now we bring you a recipe with which we can create equally precious memories with our loved ones. Preparation is not demanding, and soft and tasty results are guaranteed. 

Corn grits are well known to all of us and we often prepare them as creamy polenta, but the texture of grits is not suitable for making bread. Homemade cornbread is made from finely ground cornmeal that you can find in almost every supermarket. Bread made exclusively from corn flour would be too compact and firm, so it is necessary to mix corn and wheat flour. 

Play with the flavors of cornbread

The cornbread prepared according to this recipe is delicious and great for sandwiches or as a side dish with homemade goulash. If you want to prepare a real delicacy, we advise you to add toasted corn or other seeds to your cornbread. You can also play around with the ratio of corn to wheat flour to make the texture of the bread firmer or softer. 

Ingredients:

  • 250 g of corn flour 
  • 250 g of wheat smooth flour
  • 1/2 yeast (fresh or dry)
  • 1/2 bag of baking powder
  • 1 teaspoon sugar
  • 200 ml of milk
  • 200 ml of water
  • 2 teaspoons salt
  • 1 tablespoon oil
  • A little cornmeal

Procedure:

  1. Mix the yeast, sugar and warm milk and leave to activate. 
  2. In a bowl, mix the corn and wheat flour and add salt and baking powder. 
  3. Add activated yeast, water and a tablespoon of oil to the mixture of dry ingredients and knead a smooth dough that does not stick to the bowl and hands. 
  4. Leave the dough in a warm corner of the house to rise for about half an hour. 
  5. When it has doubled in volume, knead the dough again and place it in a bread baking tin. 
  6. Leave the dough to rise in the mold for another 20 minutes and then, if desired, use a sharp knife or razor to cut lines on the surface. 
  7. Sprinkle the bread with cornmeal and place in the oven at 180 degrees Celsius for about 20 to 30 minutes. 
  8. After baking, leave the bread to cool and only then cut it into slices and serve with your favorite spread.
