REQUIRED:
For cakes:
- 450g flour + extra for sprinkling
- 1 tablespoon baking powder
- 40 g of sugar
- ¼ teaspoon of salt
- 200 g of butter, cut into cubes
- 1 and a half teaspoons of chopped rosemary
- ½ cup of milk
- 1 egg
- 1 and a teaspoon of honey
For the glaze:
- 2 tablespoons honey
- 3 tablespoons of water
- 2 sprigs of rosemary
When serving:
- butter
- honey
PREPARATION:
Preheat the oven to 250 degrees. Line two baking trays with baking paper. In a large bowl, mix flour, baking powder, sugar, and salt. Add butter and combine everything. Stir with your fingers to get breadcrumb-like crumbs. Then add the chopped rosemary and mix everything once more.
In a small bowl, whisk together the milk, egg, and honey. Make a hollow in the flour mixture and add the wet ingredients. Mix everything well with a silicone spoon until you get a soft dough. Then take the dough out on a work surface sprinkled with flour and mix lightly. Form a round disc from the dough and cut it into 8 slices (triangles). Transfer them to trays, leaving enough space between each. Bake in the oven until golden brown, about 20 minutes.
To prepare the glaze, it is necessary to heat honey, water, and sprigs of rosemary in a small pan. Bring the mixture to a boil and cook for one minute. Coat the finished cakes with this glaze while they are still warm. Serve with a piece of butter or honey.
