A refreshing salad with cucumber
If you like creamy and refreshing salads, try this one with cucumber and lentils.
A refreshing salad with cucumbers and lentils can be eaten as a stand-alone meal or as a side dish with meat. It is made quickly, and the only thing that can take you a little time is cooking the lentils. This salad is great when it is hot weather, and because of the variety of foods, it is better than the famous tzatziki salad. You can also serve it with a piece of homemade, hot bread.
Ingredients:
- 2 cloves garlic
- 1/2 cucumber
- 190 g of cooked lentils
- 150 g of yogurt
- 250 g cream cheese
- peel 1 lemon
- 1 purple onion
- 1 handful of spice
Preparation:
- Peel a squash, grate it and fry it in hot oil.
- Chop them with a fork.
- Finely chop the cucumber, then place in a bowl and add the minced garlic, boiled and strained lentils, as well as yogurt, cream cheese, grated lemon zest and finely chopped purple onion. Add salt and pepper, then mix well.
- Finally, add the finely chopped spice and stir once more.
