Cheer up the family with an old cherry pie!

Nothing brings you back to childhood like the smell of homemade pie. Perfectly crispy dough, lots of butter with a couple of tablespoons of sour cream that gives that special flavor.

Cheer up the family with an old cherry pie!

The preparation itself is very simple and quick and in this case, the biggest job is actually to clean the cherries. I always bake the pie from a pound of fruit, it’s a little harder to cut, but the rich flavor makes up for the slightly messy look. Now that we enjoy a variety of seasonal fruits, treat yourself to a homemade pie, add the fruit you have and cheer up the family. 

Crisp pastry:

  • 400 g of sharp flour
  • 200 g butter
  • 100 g of sugar
  • a pinch of salt
  • 1 baking powder
  • 2 egg yolks
  • 2 tablespoons sour cream
  • lemon zest and bourbon vanilla sugar if desired

Stuffing:

  • 1 kg of peeled cherries
  • 80 g sugar (our cherries were very ripe and quite sweet)
  • vanilla sugar
  • 2-3 tablespoons bread crumbs (to pick up a little juice)

Preparation:

  1. Add cold diced butter to the flour and rub it into the flour with your fingers until you get a breadcrumb-like mixture. You can also make the dough using a mixer.
  2. Add the other dry ingredients and egg yolks, and when the mixture is combined, add the cream and knead the dough.
  3. Divide the dough into two parts; let one be greater than the other.
  4. Wrap both in cling film, and place the smaller ones in the freezer and the larger one in the fridge for about 15 minutes.
  5. Baking sheet, smaller than the one for the oven, coat with butter and a little flour.
  6. Preheat the oven to 180 degrees.
  7. Roll out the dough from the fridge on a floured surface and transfer to a baking sheet.
  8. Let these ends of the dough reach the middle of the sides of the sheet so that the filling stays in the dough. 
  9. For the cherry filling, clean and add sugar, spices and crumbs. Arrange the stuffing and grate the rest of the dough that was in the freezer.
  10. Bake for about 40 minutes until the cake takes on a nice color.
