BISCUIT INGREDIENTS:
- 3 eggs
- 80 g brown sugar
- 100 g flour
- 20 g cocoa
INGREDIENTS FOR FILLING:
- 20 g gelatin
- grated peel 1 orange
- fresh juice of 3 oranges (about 250 ml)
- 60 g brown sugar
- 250 ml whipping cream
- 1 teaspoon vanilla essence
- 200 g cream cheese
GLAZE INGREDIENTS:
- 50 ml whipping cream
- 1 tablespoon of butter
- 2 teaspoons of honey
- 100 g quality dark chocolate
ADDITIONAL INGREDIENTS:
- oil
- powdered sugar for sprinkling,
- half a sliced orange for decoration
PREPARATION:
1. Whisk the egg whites with the sugar into a stiff batter, add the egg yolks and whisk into a thick foam. Mix sifted flour with cocoa and pour the mixture into a cake pan lined with baking paper (diameter 24 cm).
2. Bake in a preheated oven at 160 ° C for about 30 minutes. Allow it to cool in the mold then turn out of the mold. Soak the gelatin sheets to swell in cold water for about 10 minutes.
3. Boil orange peel, juice, and sugar in a pot. Remove from the heat, add the softened gelatin sheets and stir until the gelatin dissolves.
4. Grease the mold and sprinkle it with powdered sugar and add the baked base. Whip the whipped cream with the vanilla, and add the cream cheese and the gelatin juice.
5. Pour the filling on a baked base and leave it in the fridge for 4 hours. Once squeezed, prepare the glaze. First, boil the cream with the butter and honey, remove from the heat and add the chocolate.
6. Stir until the chocolate is melted and the glaze has cooled slightly. Then pour the glaze over the hardened cream, spread, and leave in the fridge for an hour. Finally, garnish with orange slices.
