Ingredients:

  • 2 medium-sized zucchini
  • 100 g ham or bacon
  • 150 g cream cheese
  • 50 g dry mozzarella or some other melted cheese
  • 1 chili pepper
  • a few basil leaves
  • salt and pepper

Preparation procedure:

As with any preparation of Hasselback foods, it is necessary to cut the zucchini with a knife to a width of 4/5 of the fruit, taking care not to cut it completely to get a nice shape, let's call it, accordion. Here you can use tricks from the Internet, and that is to place the zucchini between two boards or a cooker or something else so that one side of the zucchini touches the kitchen surface while the edges rest on the above "obstacles" or just be careful when cutting. Cut the ham into strips and place one piece (maybe two) between each notch on the zucchini and push it down. Place them thus prepared on a lightly oiled baking sheet and bake in a preheated oven (200 degrees) for 10-15 minutes, depending on whether you want the zucchini to stay a little crispy or not.

While the zucchini are baking, prepare the filling by mixing the cream cheese, finely grated mozzarella, chopped chili and basil into a fine smooth mixture with the addition of a little salt and pepper. The amount of salt also depends on how salty your ham/bacon is, so don't overdo it. The last step is to fill the already half-baked zucchini with a mixture of cream cheese, sprinkle with a little more grated cheese and bake for about 10 minutes in the oven until the cheese melts. Serve warm and wonder where this recipe was before.
