Ideal recipe for everyone: Mediterranean pot

When you come back after a walk in the cold, there is nothing finer than a few tablespoons of warm, hearty food. This Mediterranean pot is full of healthy vegetables, it also contains a typical winter healthy food - beans and it is super tasty. Good appetite! 

Ingredients for 4 servings:

  • For the pot:
  • 3 red peppers
  • 1 yellow pepper
  • 200 grams of artichoke heart (in oil)
  • 2 onion heads
  • 3 cloves of garlic
  • 1 red chili pepper
  • olive oil
  • 1 teaspoon of tomato concentrate
  • 1 teaspoon ground pepper (sweet)
  • 400 grams of tomatoes (canned)
  • 250 milliliters of vegetable stock
  • 150 grams of olives (pitted)
  • sun, paper
  • 250 grams of white beans (canned)
  • 1 bunch of basil

For garlic bread:

  • • 250 grama ciabatta
  • • 1 tablespoon olive oil
  • • 1 clove of garlic

Preparation:

1. Preheat the grill in the oven to 200 degrees. 

2. Cut the peppers lengthwise, clean them of seeds, wash them, and place them on a baking sheet lined with baking paper. Bake in the middle of the oven for about 5 minutes. The skin of the peppers should turn black and create bubbles. Then take the peppers out of the oven, leave them to cool briefly, peel them, and cut them into pieces.

3. Drain the artichoke hearts in a colander and bake for 2 to 3 minutes on a baking sheet lined with baking paper. Take it out of the oven.

4. Peel and finely chop the onion and garlic. Cut the chili lengthwise, clean of seeds, wash, and also cut into cubes. Heat 1 tablespoon of olive oil in a pot and sauté the onion, garlic, and chili briefly.

5. Reduce heat, add tomato concentrate and fry briefly. Then add the ground pepper and fry briefly as well. Briefly mix the tomatoes with a hand blender and add.

6. Then add the vegetable stock and olives and simmer for about 15 minutes. Add salt and pepper and add the drained beans. Then add the artichokes and pieces of paprika and cook for another 5 to 10 minutes.

7. Meanwhile, for the garlic bread, cut the ciabatta into slices about 1.5 cm thick, drizzle with olive oil and rub with a halved clove of garlic. Bake in the middle of the oven for 3 to 5 minutes until crispy.

8. Wash and dry the basil, tear off the leaves, and chop coarsely. Season the dish again with plenty of salt and pepper, season with basil and olive oil, and serve with garlic bread.
