Minestrone: an amazing Italian soup

If you haven't yet, it's time to try preparing the famous Italian soup and enjoy its rich flavors. Minestrone soup or translated from Italian as "big soup", was a popular dish in the time of the ancient Romans. Today's version of the recipe for this popular soup differs in almost all Italian regions because everyone has their own secret ingredient. It is ideal for every season and you can adapt it to your taste, and it contains many nutrients and is very healthy.


  • 200 g peas
  • 200 g zucchini
  • 200 g tomatoes
  • 1 onion
  • 1 carrot
  • 2 cloves of garlic
  • 1 cup of pasta
  • 2 tablespoons olive oil
  • half a celery
  • fresh primrose
  • salt, pepper
  • a little parmesan


Heat the oil in a pan, add the onion, garlic, carrot, celery, and zucchini cut into small cubes, then simmer for about five minutes until the vegetables soften, but they must not change color. Add the tomatoes and simmer for another three minutes. Pour two cups of water, increase the heat, then let it boil. Add the pasta and cook uncovered until the pasta and vegetables are cooked through. Add peas to the soup, add spices to taste, and cook for another 15 minutes. Finally, add freshly chopped parsley and serve while it is still hot, with sprinkled parmesan on top.
