Moroccan pancakes: A unique summer breakfast

There are many recipes for cakes and crepes of this variety today, but somehow everyone's heart and stomach ache as soon as these pancakes are mentioned. And every national cuisine, every house, has a recipe for the right ones...

Today we suggest you make an exotic version of the most famous and most affordable dessert in the world, and we would say the most fun. These are pancakes with a thousand holes - also known as ‘baghrir’, they originate from Morocco and Algeria, and they are usually served for breakfast, sweet or salty, as desired.

Ingredients:

  • 250 g of wheat grits
  • 100 g of smooth flour
  • 1 tablespoon dry yeast
  • 1 teaspoon baking powder
  • 1 tablespoon sugar
  • 500 ml of warm water
  • salt

Preparation

  1. Mix all dry ingredients - semolina, flour, baking powder, yeast, and sugar, and transfer them to a blender.
  2. Pour warm water over the dry ingredients and stir for five minutes. Pour the resulting mixture into a bowl, cover, and leave for 60 minutes.
  3. Coat the pan with butter, grab a little of the mixture with a ladle, and bake on low heat for two or three minutes.
  4. The pancake is baked when the surface is dry and spongy, and remember to bake it only on one side.
  5. Stir in your imagination and fill it with whatever you want. Our suggestion is to whisk a little sweet-sour cream and spread it along with fresh strawberries over it. And you can put a piece or two of melted chocolate.
