Refreshing chocolate and coconut cubes!

Find refreshment in cold coconut and chocolate cubes. They are very easy to prepare, gluten-free and also a great choice when you want refreshment in the form of dessert.

Biscuit ingredients:

  • 160 g dark chocolate
  • 35 g butter
  • 2 eggs
  • A pinch of salt
  • 1 vanilla sugar
  • 30 g coconut flour (fine)
  • 10 g baking powder

For the cream:

  • 1 bag of coconut pudding
  • 1 liter of milk Sugar (sweeten as desired)

For decoration:

  • Grated coconut

Preparation:

  1. Melt the chocolate with the butter.
  2. Separate the egg whites, add a pinch of salt to them and beat them into a stiff batter. Put it aside.
  3. Whisk the egg yolks with the sugar until foamy. Add the melted chocolate and mix everything well. Stir coconut flour and baking powder into the chocolate and egg yolk mixture.
  4. Finally, stir in the egg whites with light movements.
  5. Pour the dough into a greased mold and bake at 180 degrees for 20 minutes.
  6. Meanwhile, cook the coconut pudding. Heat the milk over low heat and whisk the pudding powder and sugar well with a little milk. Add to the hot milk and cook until the pudding thickens.
  7. When the biscuit is done, and the pudding has cooled down a bit, pour the pudding over the biscuit.
  8. Allow the cake to cool slightly at room temperature.
  9. Sprinkle grated coconut over the surface and refrigerate for at least four hours. 
  10. Refreshing coconut and chocolate cake is ready. Good appetite!
