Biscuit ingredients:
- 160 g dark chocolate
- 35 g butter
- 2 eggs
- A pinch of salt
- 1 vanilla sugar
- 30 g coconut flour (fine)
- 10 g baking powder
For the cream:
- 1 bag of coconut pudding
- 1 liter of milk Sugar (sweeten as desired)
For decoration:
- Grated coconut
Preparation:
- Melt the chocolate with the butter.
- Separate the egg whites, add a pinch of salt to them and beat them into a stiff batter. Put it aside.
- Whisk the egg yolks with the sugar until foamy. Add the melted chocolate and mix everything well. Stir coconut flour and baking powder into the chocolate and egg yolk mixture.
- Finally, stir in the egg whites with light movements.
- Pour the dough into a greased mold and bake at 180 degrees for 20 minutes.
- Meanwhile, cook the coconut pudding. Heat the milk over low heat and whisk the pudding powder and sugar well with a little milk. Add to the hot milk and cook until the pudding thickens.
- When the biscuit is done, and the pudding has cooled down a bit, pour the pudding over the biscuit.
- Allow the cake to cool slightly at room temperature.
- Sprinkle grated coconut over the surface and refrigerate for at least four hours.
- Refreshing coconut and chocolate cake is ready. Good appetite!
