Stir-fried pork with ginger and soy
This low-calorie pork, fried in a delicious mixture with soy sauce and cornflour, is quick and easy, and yet tasty.
One serving contains three optimal daily servings of vegetables. This light, yet delicious meal has 250 kcal per serving.
Ingredients
- 250g of pork ribs (removed all visible fat), cut into pieces
- 1 teaspoon of cornflour
- 2 tablespoons of dark soy sauce
- low-calorie frying spray
- 150g of mushrooms, sliced
- 2 red peppers, peeled and cut into slices
- 75g of mangetout peas (crispy pea) trimmed
- 15g of fresh ginger root, cut into thin sticks
- 1 clove of garlic, thinly sliced
- 4 spring onions, cut into shorter pieces
- freshly ground black pepper
Preparation
Season the pork with pepper. Mix the cornflour with two tablespoons of cold water until smooth, then stir in the soy sauce. Spray a large wok or deep frying pan with baking soda and put on high heat. Fry the pork, stirring, for 1-2 minutes or until lightly browned, but not overcooked.
Transfer to a plate. Return the pan to the heat, reduce the heat a little and sprinkle with more oil. Fry mushrooms and pepper for 2 minutes. Add the mangetout peas and fry for a minute. Add ginger, garlic, and spring onions and fry for a few seconds. Return the pork to the pan, then pour the soy sauce mixture over the meat and vegetables. Fry for 1-2 minutes, or until the sauce thickens and the pork is fried. Serve immediately.
