Tiramisu is one of those sweet classics that we never get bored of. Light cream, coffee taste, and exquisite biscuits make a combination that is hard to resist.

Today we bring you a recipe for a slightly lighter, spring version of your favorite cake - tiramisu with strawberries. 

The recipe for Tiramisu with strawberries came about quite by accident, says food blogger, Alexandra. She was making the famous Paul’s cake and she had a few egg yolks left. She didn't think long about what to do with the rest of the vanilla cream, the idea of ​​making a light tiramisu quickly dawned on her.

Ingredients for tiramisu with strawberries:

For the cream:

  • 500 ml of milk
  • 120 g of sugar
  •  5 egg yolks
  • 40 g of gelatine
  • 2 vanilla sugar
  • Peel half a lemon
  • 250 g mascarpone cheese
  • 500 ml whipping cream

Other:

  • 300 g biscuit
  • 200 ml of milk
  • Vanilla aroma
  • 600 g strawberries

Put 500 ml of milk on the stove and wait for it to boil. Add the rind of half a lemon to the milk. In a separate bowl, combine the egg yolks, sugar, vanilla sugar, and thickener. Stir until you get a uniform mixture. When the milk has boiled, remove the rind of the lemon. Separate 200 ml of hot milk and put it in the mixture with the egg yolks. Add the mixture with the egg yolks and milk to the remaining milk and cook for about three minutes until the mixture thickens.

To keep the cream shiny, immediately transfer it to a cold bowl that you kept in the freezer for at least half an hour. Cover the cream with plastic wrap and wait for it to cool completely. Whip 500 ml of whipping cream. Add mascarpone and whipped cream to the cold cream. Then add the whipped cream gradually and lightly to keep the cream translucent. Soak the biscuits briefly in milk and place them in a bowl. Add cream to the biscuits. Put strawberries on the cream and cream on the strawberries again. Repeat the procedure.
