An amazing fitness salad by Julia Roberts

We always like to learn something from our favorite stars. Sometimes it's a chic outfit, sometimes it's a great beauty trend, and this time it's a recipe for a fitness summer salad that Julia Roberts adores.

The famous American actress looks stunning, thanks in part to her personal instructor Kathy Kaehler. In line with a strenuous program of step aerobics training and strength training, Julia Roberts enjoys healthy and delicious recipes.

This includes this summer version of the salad with baby spinach, carrots, and chickpeas, which the 54-year-old prepares herself and which is one of her favorites.

And now she shared it with the world:

For salad:

  • 1 can of chickpeas (425 g)
  • 1 bunch of baby spinach, washed and dried
  • 2-3 carrots cut into slices
  • 1 handful of walnuts
  • 80 g feta cheese, crushed
  • pepper

For dressing:

  • 3 tablespoons vinegar
  • 1 tablespoon of mustard
  • 80 ml of olive oil
  • salt
  • pepper

Preparation

  1. Place the chickpeas in a colander and allow them to drain well. Then rinse well under cold water until there is no more foam. When the chickpeas are drained again, place them in a salad bowl.
  2. In a small bowl, mix the mustard, salt, and pepper for the dressing. Then slowly stir in the olive oil until everything is combined into a topping. Set the finished dressing aside.
  3. Add spinach and carrot and stir. Then pour over the dressing.
  4. Stir in feta and walnuts, then season the salad with salt and pepper. Serve immediately.

You can always make this summer salad in different ways, according to your wishes. Instead of carrots, you can add quinoa or sun-dried tomatoes.
