Delicious: Cherries and raspberries cake
Preparation is quite simple and it will take only 15 minutes of your time.
Who says quick and easy cakes aren’t fine? However, this is probably the only cake in which people who don't like fruit cakes tolerate pieces of fruit , because the biscuit is light and very tasty. We can assure you that your children will adore this cake. So, it can deservedly be in the competition of "timeless" cakes.
Ingredients:
- 2 eggs
- 1 cup sugar
- 1 vanilla sugar
- 1 teaspoon grated lemon zest
- half a cup of oil
- 1 cup liquid yogurt
- 2 cups plain flour
- 1 baking powder
- cherries
- raspberries

Preparation:
To start, you will need a 2 dl glass. Mix eggs with sugar and vanilla sugar. Then add yogurt, oil, and lemon zest while you are mixing. Finally, add flour mixed with baking powder and mix well. Cherries need to be clean and washed. In the same way, prepare raspberries. I must mention that I used a cake mold (26 cm in diameter) and the amount of mixture is quite sufficient. However, if you are going to use a larger pan, you have to double the mixture. In that case, put everything in double, except the baking powder. Line the mold with baking paper, if you use a baking tray you don't need to put the paper on it but you should cover the bottom and sprinkle it with a little flour.
Preheat the oven to 180 ° C. Pour the mixture into a mold, arrange cherries and raspberries on it and bake for about 15 minutes at 180 ° C, then reduce to 150 ° and bake for another 15 minutes. When the cake gets a nice golden-brown color - it’s done. Still, you can try a toothpick and see for yourself. When the cake is baked, take it out of the mold and let it cool. If you are working on a casserole, leave it to cool completely in it. Finally, sprinkle with powdered sugar, cut it into cubes and serve. Good appetite!
