As you already know, these are chickpea dishes that are very popular among vegetarians around the world due to their nutritional value. The best thing is that you can combine these little fried dumplings with various fresh side dishes, salads, and sauces, and create a new and exciting gastronomic experience every time.

Although in the Middle East, where falafel originates from, it is traditionally prepared from chickpeas or beans, crushed garlic, parsley, and spices such as cumin and sweet pepper, today there are many variations on the theme, and we bring you a proven recipe below with which you will certainly not go wrong.

It is necessary:

  • 250 g of raw chickpeas
  • 2.3 cloves of garlic
  • 1 black or purple onion
  • 30 g flour
  • 5 g ground cumin
  • 4.5 g of baking soda
  • so, pepper
  • juice of half a lemon
  • this year

  • coriander
  • basil
  • frying oil

Preparation:

Wash the chickpeas several times, then soak them to stand overnight to soften. The next day, pour that water over, then rinse the chickpeas one more time, and then put them in a blender or chopper, then blend until you get a grainy texture. Leave a spoon of the mix in the blender, and transfer the rest to another deeper bowl. Then add chopped onion and garlic, coriander, cumin, chili, and lemon juice to the blender, and blend everything well to get a fine paste (if you use fresh coriander and basil, it will be even better because the paste will be a nice green color).

Add the pasta to the chickpeas and mix everything well, and in another bowl mix the dry ingredients - flour, baking soda, and ground cumin, and add that to the previously prepared mixture. Season with salt and pepper to taste, mix everything once more, then remove a small amount of the mixture with your hands (which you have slightly moistened) and shape into walnut-sized dumplings.

Fry the falafel in deep and well-heated oil, at a moderate temperature, for a few minutes on both sides so that it is evenly fried, taking care not to burn. Remove to a napkin to drain off excess fat, then serve with pita bread or integral tortilla, lettuce, tahini, or tzatziki sauce, and vegetables as desired.
