The best recipe for broccoli soup!

Broccoli contains all the necessary vitamins and minerals for the health of our body. It is excellent for losing weight, strengthening bones, and against colds. It is full of vitamin C, contains a lot of fiber and improves digestion. Reduces blood cholesterol, and regulates high blood pressure. It is full of potassium, phosphorus, iron and chromium minerals.

We think this is more than enough reason to prepare a soup from this miraculous vegetable.

Ingredients

  • 2 cups of water
  • 4 cups chopped fresh broccoli 
  • 1 cup chopped celery
  • 1 cup chopped carrots
  • 1/2 cup chopped onion
  • 6 tablespoons butter, cubed
  • 6 tablespoons of flour
  • 3 cups chicken broth
  • 2 cups of milk
  • 1 tablespoon of minced fresh parsley
  • salt
  • 1/2 teaspoon of garlic powder

Preparation :

Bring the water to a boil. Add broccoli, celery and carrot, and cook until it became soft. Strain and set the vegetables aside. In the same pan, fry the onion in butter until soft. Mix in the flour to make a smooth paste. Gradually add broth and milk and mix until smooth. Let it boil and cook until thickened. Stir in the vegetables and remaining ingredients. Cook, stirring occasionally, for 15 minutes or until the vegetables are soft.
