Preparation:
- First, cover the baking sheet with baking paper. This will be the base on which you will stack the pralines.
- Pour the tonic water into the pot and cook it on a medium-high temperature until it reduces by half in volume. Leave the reduced tonic to cool.
- Put the dark chocolate, broken into cubes, into a large bowl. Heat the cooking cream in a separate pot and add the butter. Stir until the butter melts and then pour over the chocolate and stir until the chocolate melts.
- Finally, stir in the gin and reduce the tonic.
- Put the mixture in the refrigerator until it is compressed, and once it is solid, use a spoon and your palms to shape it into balls.
- Place the balls on a baking sheet and first keep them in the refrigerator and then in the freezer for 30 minutes. While the balls are cooling, melt the white chocolate in steam and grate the zest of one lime into it.
- Take the balls out of the freezer and dip them one by one in white chocolate, place them on a baking sheet and sprinkle them with lime zest.
- When all the pralines are ready, put them in the freezer for 15 minutes and then in the refrigerator until serving.
