NEEDED:
For potato biscuits:
- 1400 g of potatoes (about 7-8 medium potatoes)
- 8 tablespoons of butter
- 4 large cloves of garlic
- 1 teaspoon salt
- ¾ teaspoons of freshly ground pepper
- 1 cup finely grated parmesan
For topping:
- ¼ cup of sour cream
- 226 g of smoked salmon
- ¼ Cups of finely chopped red onion
- 2 tablespoons chopped fresh chives
- 2 tablespoons chopped fresh dill
PREPARATION:
Preheat the oven to 220 degrees. Prepare a cast-iron skillet. Cut the potatoes into thin slices and place them in a large bowl. Melt the butter in a pan at a medium temperature. Add garlic and simmer until fragrant. Pour the butter and onion mix over the potatoes, then stir well to cover everything evenly. Season with pepper and salt.
Starting from the center of the pan, arrange the potatoes in a spiral, overlapping each slice with the next. When the bottom of the pan is covered, sprinkle parmesan evenly over the potatoes. Then repeat the process until all the cheese and potatoes are used up. Then transfer the potato biscuits to the oven and bake until golden brown, about 50 minutes.
Remove from the oven after baking and refrigerate for about 5 minutes. When serving, put a spoonful of sour cream and smoked salmon on top. Garnish with red onion, chives, and dill.
