Here is your part of heaven. These cookies usually contain light ingredients such as egg whites, fruits, and just a few nuts or chocolate. Despite that, they are very tasty, and the big plus is the fact that they are quick and easy to prepare. So, let's start!

1. Russian bread

Ingredients:

  • 4 egg whites
  • 1 pinch of salt
  • 150 g sugar
  • 1 packet of vanilla sugar
  • 1 tablespoon rapeseed syrup
  • 1 teaspoon cinnamon
  • 1 tablespoon cocoa for baking
  • 150 g flour

Beat egg whites with salt into solid snow. Stir sugar, vanilla sugar, syrup, cinnamon, and cocoa into the egg whites. Finally, mix the flour carefully. Cover the baking sheet with baking paper. Put the dough in a pastry bag and squeeze it onto baking paper in the shape of a letter. Leave the tin in a cool place for 15 minutes. Preheat oven to 170 degrees (up / down). Then bake the cookies for about 15 minutes until they become crispy. Leave the letters to cool and only then carefully take them out of the tin.

2. Almond biscuits

Ingredients:

  • 125 g semi-fat margarine
  • 10 g sugar
  • 2 egg yolks
  • 125 g flour
  • 2 tablespoons milk,
  • 100 g almonds (chopped)
  • 4 tablespoons sugar

Mix margarine and sugar for 3 minutes until frothy. Stir in the egg yolks and add the sifted flour. Preheat oven to 200 degrees. Place the dough on a baking sheet lined with baking paper and press with your fingers to the size of the baking sheet. Whisk the other egg yolks with the milk and coat the dough. Sprinkle with chopped almonds and coarse sugar. Put the tin in the oven and bake for 10 to 12 minutes. Remove the tin from the oven and leave it to cool for about 10 minutes. Cut the crackers into smaller pieces and leave them to cool completely.

3. Fruit cubes

Ingredients:

  • 50 g butter
  • 100 g sugar
  • 100 g mixture of dried berries (finely chopped)
  • 45 g flour
  • 50 g full-fat sweet cream
  • 100 g cooking chocolate 

Preheat oven to 180 degrees (up / down). Line a rectangular mold (about 20 x 24 cm) with baking paper. Melt the butter and sugar in a saucepan while stirring. Stir in berries, flour, and cream and cook briefly. Arrange the mixture in a mold and smooth. Bake in the oven at a medium temperature for 10 to 15 minutes until golden brown. Leave to cool and then cut into cubes with a knife. Melt the chocolate in a bowl immersed in hot water and decorate the cookies.

Per piece: 50 kcal, 1.8 g fat. Preparation: 30 minutes. Baking time: 10-15 minutes

4. Chocolate foam

Ingredients:

  • 2 egg whites
  • 100 g powdered sugar
  • 40 g flour
  • 60 g grated dark chocolate
  • 1 pack of vanilla sugar
  • 1 pinch of cinnamon and cardamom

Preheat oven to 160 degrees (up / down). Beat the egg whites into solid snow, sift the sugar and flour, add the chocolate, vanilla sugar, and spices and mix everything lightly. Put the dough in a pastry bag and squeeze the rolls on a baking sheet lined with baking paper. Bake in the oven for about 18 minutes.

Per piece: 13 kcal, 0 g fat. Preparation: 15 minutes. Baking time per sheet: 18 minutes

5. Lemon figs 

Ingredients:

  • 4 egg whites
  • 300 g powdered sugar
  • 1 tablespoon lemon juice
  • 2 teaspoons lemon rind
  • 75 g candied lemon zest
  • 300 g peeled almonds (finely ground)

Preheat oven to 140 degrees (up / down). Beat the egg whites into a stiff batter. Gradually add powdered sugar, juice and lemon zest and beat for about 2 minutes. Finely chop the lemonade and carefully mix in the snow with the almonds. Place two teaspoons in heaps on a baking sheet lined with baking paper. Leave the puslices to dry in a hot oven for 30 to 35 minutes. Then take them out and leave to cool completely.
