There are days when you don't have time for anything. But that doesn’t mean you can’t eat healthy, fine and homemade! Cold cucumber soup is delicious, refreshing and easy to prepare, and it will take you only 10 minutes. 

Cucumber soup - benefits

Although we are used to the soup being eaten hot, the Spaniards have long enjoyed the benefits of cold soups, the most famous of which is gazpacho - cold tomato soup.

However, other vegetables are also suitable for this type of soup, and the most common ingredient among them is cucumber. Cold cucumber soup with cream (or yogurt) and with a little spice, will become your favorite among soups, especially on warm days when you need a quick refreshment. This nutritious soup helps the body, in addition to cooling, and in detoxifying the body. Namely, cucumber contains a lot of water, which makes it the perfect food for detoxification. In addition, cucumber is low in calories and high in fiber, so it is one of the main foods for starting the metabolism and losing extra pounds. Do you need another reason why cold cucumber soup is so good?

Ingredients:

Creamy yogurt-based cucumber soup spiced with garlic and herbs is a great choice for cooling down and those days when you have neither the time nor the desire to spend hours in the kitchen.

  • 1 kg of peeled cucumbers (if the peel is thin you don't even have to peel them, just wash them well)
  • 1 and a half cups of sour cream or Greek yogurt
  • 1/2 cup spices (dill, basil, mint, parsley, tarragon, chives),
  • 1/4 cup sliced ​​red onion 
  • 1 peeled clove of garlic 
  • 1/2 teaspoon salt 
  • 1 teaspoon white or wine vinegar

Preparation:

1. Peel the washed cucumbers, cut them lengthwise, remove the seeds, and cut them into larger pieces.

2. Fry the chopped onion in oil until it turns yellow and add the chopped garlic.

3. Add cucumbers, spices and pour water over everything, and cook on low heat for 5 minutes.

4. Remove from the heat and allow to cool slightly, then add everything to a blender.

5. Put the soup in a suitable bowl, then stir in the vinegar, sour cream or yogurt and mix everything well.

6. Put to cool in the refrigerator for about an hour.

7. Serve in glasses.

Your cold cucumber soup is ready! If you want to deepen its taste, you can be creative and add some of the following ingredients to a blender: 1-2 anchovy fillets, jalapeño peppers, lime juice, crushed feta cheese or ricotta, avocado cubes, and even a slice of smoked salmon.
