Quick tortillas with zucchini and cheese
Zucchini is a healthy vegetable that can be used to prepare a variety of delicious dishes. Among them are these quick and easy tortillas with zucchini and cheese, a tasty meal you can eat for breakfast, lunch, and (or) dinner.
Ingredients:
- 1 medium onion
- 2 medium zucchini
- 100 g boiled corn
- 2 large eggs
- 100 g grated gouda or cheese as desired
- 100 g parmesan or grated Padano cheese
- 4 large tortillas
- salt and pepper
- olive oil
Preparation
1. Finely chop the onion. Fry it in two or three teaspoons of olive oil. Add the zucchini that you previously washed, peeled, and cut into smaller cubes or strips. If you have grown zucchini yourself, feel free to leave the peel on them. Add salt, pepper and onion, and zucchini for five minutes.
2. Beat the eggs and pour them into a bowl with the zucchini and onions. When the eggs are cooked, remove from the heat and add the cooked corn, then the parmesan or grated Padano and stir. Prepare a larger pan and pour a little olive oil into it, then heat to a medium temperature.
3. Place one tortilla on a plate, sprinkle it with a little grated gouda, spread half of the mixture of zucchini and eggs, sprinkle with cheese again, and cover with another tortilla. Carefully transfer the tortillas to the pan and first bake on one side for two to three minutes. Then switch to the other side and also bake for two to three minutes until the cheese starts to melt. When baking, feel free to squeeze the tortillas a little to make them easier to combine. Repeat the process with the remaining tortillas and stuffing. When they are baked, cut them into triangles and serve.
