You've probably heard of chocolate ganache before, and you've probably eaten it several times because it is often used for topping cakes, but also as a filling for cakes. And yes, it is true that it is prepared by professional chefs, however, it is not difficult to make it at home.

All you need for the perfect chocolate ganache is chocolate and sweet sour cream. Of course, and a little patience and not any chocolate. It needs to be really high quality, so it would be good to use one that contains at least 70 percent cocoa.

This does not mean that you cannot use milk chocolate, but that means reducing the amount of sour cream. The only thing you should never use to prepare chocolate ganache is cooking chocolate.

How is chocolate ganache prepared?

Break the chocolate into small pieces and put it in a bowl. Pour the sour cream into the pot and put it to heat. Just before it boils, add the chocolate to the sour cream and remove it from the heat, then wait for about 10 seconds and start stirring with a wooden spoon until the chocolate is completely melted. You need to get a smooth and uniform mixture.

If you plan to pour the chocolate ganache over the cake, then leave it to cool a bit, then pour it in the middle of the cake, and, with a flat spatula, lightly spread it all over the cake.

On the other hand, if you are planning it for stuffing, leave it in the fridge to harden, and before you use it, carefully whisk it with a mixer, and quite a bit, so that it does not clump.

In relation to what you need chocolate ganache for, it also depends on how much chocolate and sour cream you will need. For example, if you are preparing it for topping a cake, use 100 grams of chocolate and 200 ml of sour cream. However, if you need chocolate ganache as a filling for cake, then take 200 grams of dark chocolate and 100 ml of sour cream.
