Potato croquettes filled with minced meat

When you have leftover mashed potatoes from lunch, don't throw them away, but use them to prepare a fantastic lunch for tomorrow. Potato croquettes are perfect and hardly anyone can resist them. Croquettes are also convenient because you can fill them with whatever you want, and we have a suggestion for a minced meat filling. You will not need a lot of time to prepare, and your household will be delighted. All that remains is to decide which sauce and salad you will serve with them.

- 500 g of potatoes
- 2 eggs
- 100 g of corn flour
- 350 g of minced meat
- 1 onion
- 2 cloves of garlic
- salt, pepper

Peel the potatoes, then mash them with a fork, then add whole eggs and flour to them and knead them into a stiff dough, like the one you make for dumplings. Put the dough in the refrigerator, and in the meantime, fry the onion and garlic in a little oil, just enough to make them translucent, add the minced meat, and stew it until it turns golden brown. Scoop out some of the potato mixture with a spoon, shape it into a ball with your hands, and then press it into a patty shape. Put the meat on one side, then fold it over and close it from all sides with your hands. Repeat the process until you use up all the material. Roll them in corn flour, then fry them in hot oil until they are golden on both sides.
