Ingredients:

- 100 g unsalted butter, room temperature
- 1 teaspoon salt
- 80 g of cold water

- 1 egg
- 1 tablespoon milk
- 80 g mozzarella cheese
- 40 g of hard cheese
For the sauce:
- 30 g melted unsalted butter
- 1/2 tablespoon garlic
- 1/2 tablespoon spring onion
- 1 tablespoon honey
Preparation:
Mix the flour with the butter and combine. Stir in the water, then pour in the flour. Knead the dough. Put the dough in a bag and then in the fridge for half an hour. Sprinkle with flour and roll out the dough, then fold on both sides towards the middle, in length and width, so as to form a square. Sprinkle with flour and stretch again. Repeat the process 2-3 times. Finally, stretch to 5 mm thick. Whisk the egg with the milk, then coat with the dough. Sprinkle grated mozzarella on one end and half of the dough, then fold in the other part of the dough. Roll out the dough, coat with egg, then sprinkle with grated cheese as desired. Cut the strips. Twist a little, then arrange on a baking sheet lined with baking paper. Coat with egg. Bake in a preheated oven at 200 ° C for about 18 minutes. Mix all the ingredients for the sauce and then coat the finished rolls. Finely chop the garlic and spring onions before adding them to the sauce.
