Recipe of the day: Blueberry mousse cake

This cake will appeal primarily to housewives because there is not too much mess and not too much time spent in the kitchen, and that is sometimes the key thing for us to really make some dessert. Light biscuit, white chocolate mousse, blueberry finish, and a little orange for extra flavor and juiciness.

  • 2 eggs
  • 1 vanilla sugar
  • 100 g of sugar
  • 100 ml of oil
  • 80 ml of milk
  • 130 g flour
  • 3 tablespoons orange or lemon jam


  • 1 bag of gelatin + 4 tablespoons of cold water
  • 150 g blueberries 
  • 350 ml of sweet-sour cream
  • 150 g of white chocolate
  • 50 g powdered sugar


  • 150 g blueberries, fresh or frozen
  • 2 tablespoons sugar
  • 1 vanilla sugar
  • 1 tablespoon lemon juice
  • 2 tablespoons of water


For the crust: Beat eggs, sugar, salt, and vanilla sugar with a mixer. Stir for ten minutes until the mixture doubles and becomes light yellow. Add oil and milk, and whisk briefly. Gradually add the flour to the mixture and stir just until combined. Arrange the mixture in a mold 20 centimeters in diameter lined with baking paper and bake for 35 minutes.

For the mousse:  mix gelatin with water and leave to swell. Mash the blueberries in a blender. Mix half of the sweet-sour cream and heat with white chocolate. Remove from the heat as soon as it melts and unites. Add swollen gelatin to the mixture, when it melts, add mashed blueberries. Whisk the other half of the sweet-sour cream with a mixer and slowly combine with the filling, which will be a little thinner.

For the topping: Heat blueberries, sugar, vanilla sugar, and lemon juice in a saucepan. When it boils, strain it if desired and add the dissolved density. Return to the hob and cook for another minute until thickened.
