Like all other summer fruits and vegetables, zucchini are ideal because they are low in calories and rich in vitamins and other nutrients such as fiber. However, in addition to being very tasty, zucchini are also very healthy and they can be prepared in countless ways. 

Stuffed, fried, or grilled, like a stew - zucchini is certainly one of the best summer foods that do not require a lot of additives or time to prepare. This simple recipe for pancakes with zucchini will delight all lovers of this vegetable. They are extremely tasty, healthier, and less caloric than the standard pancakes.

Also, they are very practical because you can take them as a snack for work. 


For the dough:

  • 2 smaller zucchini
  • 3 eggs
  • 50 g flour
  • 50 g of cheese
  • 80 ml of milk
  • a little acidic water
  • salt, pepper

  1. Grate the zucchini, salt them and leave for ten minutes to release the excess liquid. 
  2. After that time, squeeze them a little with your hands to drain completely. 
  3. Whisk the eggs, then add the flour, grated cheese, chopped dill, salt, pepper, and milk and add the zucchini that you previously squeezed. 
  4. Add sour water so that you get a mixture that is thicker than for pancakes. 
  5. Mix the mixture well, then fry the pancakes in an oiled pan, for a few minutes on both sides, until they get a golden crust. 
  6. Smear them with the filling of your choice, such as cream cheese, and sour cream, and you can add a few leaves of ham.
