Ingredients:
- 150 g of honey
- 1 teaspoon baking soda
- 250 g butter
- 2 eggs
- 15 g powdered sugar
- 500 g of sharp flour
- 1 teaspoon cinnamon
- grated rind of one lemon
- 1 tablespoon rum
- 3 pinches of nutmeg
Preparation:
- Mix butter (which you leave to soften at room temperature), eggs, and rum with a whisk.
- Separately mix the dry ingredients - flour, lemon zest, cinnamon, nutmeg, and sugar.
- Heat the honey slightly and when it is warm, put baking soda in it and stir - foam should form.
- Pour this into the mixture of previously prepared butter, eggs, and rum and mix well.
- Then add the mixture of dry ingredients to it, stir well to combine and place in the fridge for an hour.
- After that, make balls about three centimeters in diameter and stack them on a baking sheet, on greaseproof paper. Let there be a larger distance between the balls (about 8 to 10 cm) because it will spread a lot.You can choose any other shape.
- Bake them in the middle of the oven, at 170 degrees - 10 minutes.
These gingerbreads are great as they are, but you can also cover them with chocolate - in which case let the chocolate be black, with as much cocoa as possible. Melt the chocolate in a steamer and pass the gingerbread through it. Put to dry on a wire rack or greaseproof paper.
If you want your gingerbreads to shine without chocolate, coat them with glucose or maple syrup, or make a syrup from sugar and a little water (to dissolve the sugar).
